Mini Kefir Loaf Cakes with Apple and Vanilla
makes 6 small loaf cakes
Ingredients
2 eggs
130 g sugar
50 g corn oil
150 g plain lactose-free kefir
200 g plain flour
15 g baking powder (not sweetened and not flavoured with vanilla)
1 pinch of salt
1 teaspoon ground vanilla
3 red apples

Method
Step 1: Prepare everything
Grease and flour 6 small loaf tins. Or line them with baking paper.
If you use silicone moulds, this is not necessary.
Preheat the oven to 175°C with top and bottom heat.
Peel 2 apples, remove the cores, and cut them into small cubes.
Wash the third apple, remove the core, and cut it into thin slices.
Step 2: Mix the wet ingredients
Put the eggs and sugar into a large bowl.
Whisk them together.
Slowly add the oil while mixing.
Add the kefir and mix well.
Step 3: Add the dry ingredients
In a second bowl, mix the flour, baking powder with vanilla and salt.
Sift the dry ingredients into the egg mixture.
Mix gently with a spatula or wooden spoon until the batter is smooth and there are no lumps.
Step 4: Add the apples
Add the diced apples to the batter.
Mix gently.
Step 5: Bake
Divide the batter evenly between the prepared tins.
Decorate the top with the apple slices.
Bake for about 25 minutes, until the tops are golden.
Check with a skewer or toothpick: if it comes out clean, the mini loaf cakes are ready.
If needed, cover the tops loosely with aluminium foil and bake for another 5 minutes on a lower oven shelf.
Step 6: Cool and serve
Leave the mini loaf cakes to cool slightly.
Then remove them carefully from the tins and serve.
