Christmas Cookies with Yogurt and Cinnamon

Ingredients
300 g plain flour
110 g icing sugar
1 heaped teaspoon ground cinnamon
120 g cold butter
70 g plain yogurt
1 egg yolk

Preparation
Step 1: Prepare
Line a baking tray with baking paper.
Sift the flour, icing sugar and cinnamon into a large bowl.
Cut the butter into small cubes and add it to the bowl.
Rub everything together with your fingertips until the mixture becomes sandy.
Step 2: Finish the dough
Add the yogurt and the egg yolk.
Mix with a fork, then knead with your hands until you obtain a smooth, even dough.
Shape the dough into a flat disc, wrap it in cling film and leave it to rest in the fridge for at least 1 hour.
Step 3: Cut out the cookies
Roll out the dough on a lightly floured work surface to a thickness of about 0.5 cm.
Cut out the cookies using Christmas-shaped cutters and place them on the baking tray, leaving a little space between them.
Put the tray in the fridge for about 30 minutes.
Step 4: Bake
Preheat the oven to 180°C top and bottom heat.
Bake the cookies in the preheated oven for about 10–15 minutes, until lightly golden.
Step 5: Cool and decorate
Leave the cookies to cool on the tray.
Dust with icing sugar.
Step 6: Serve
Serve the Christmas cookies and enjoy.
