Christmas Cookies with Yogurt and Cinnamon

300 g plain flour

110 g icing sugar

1 heaped teaspoon ground cinnamon

120 g cold butter

70 g plain yogurt

1 egg yolk

Whole milk yoghurt - 500g - Natural

Preparation

Step 1: Prepare

  • Line a baking tray with baking paper.

  • Sift the flour, icing sugar and cinnamon into a large bowl.

  • Cut the butter into small cubes and add it to the bowl.

  • Rub everything together with your fingertips until the mixture becomes sandy.

Step 2: Finish the dough

  • Add the yogurt and the egg yolk.

  • Mix with a fork, then knead with your hands until you obtain a smooth, even dough.

  • Shape the dough into a flat disc, wrap it in cling film and leave it to rest in the fridge for at least 1 hour.

Step 3: Cut out the cookies

  • Roll out the dough on a lightly floured work surface to a thickness of about 0.5 cm.

  • Cut out the cookies using Christmas-shaped cutters and place them on the baking tray, leaving a little space between them.

  • Put the tray in the fridge for about 30 minutes.

Step 4: Bake

  • Preheat the oven to 180°C top and bottom heat.

  • Bake the cookies in the preheated oven for about 10–15 minutes, until lightly golden.

Step 5: Cool and decorate

  • Leave the cookies to cool on the tray.

  • Dust with icing sugar.

Step 6: Serve

  • Serve the Christmas cookies and enjoy.
